~Broiled and peeled mbilingani, biringani saladi ~

This is my most favourite salad. I could eat tones of this stuff, especially in the summertime cause I can use fresh eggplants (the canned ones are no good !)

You'll need : * eggplants * sunflower oil * 1 small kitunguu * lemon, limau juisi * salt * garlic * tomatoes

1.First, the eggplants need to be broiled on the stove, on open flame. Also, wewe can grill them on electrical stove until the insides become very soft.
2. After removing them from the grill, let them cool off, in a covered bowl for 10 min. After that, rinse them (with cold water) and wewe skin them / peel...
