There is things called fan-fiction where they can add what they want, its a real form so to speak as its made kwa mashabiki

Werehog and Dark Sonic (from Sonic X) and Dark Spine Sonic seem to act as 'demon forms'. But Werehog only happened because of Dark Gaia's energy and was gone kwa the end of Unleashed. Same with Dark Spine Sonic which was caused kwa at least three of the Secret Rings. Dark Sonic only appeared momentarily in one Sonic X episode during Season Three most likely caused kwa the Chaos Emerald's negative energy from seeing Cosmo and Chris' suffering.

But apart from that Sonic officially has no demon form, that's only something made up kwa the fanbase and an idea used often in Sonic fanart and fanfiction.
