Well actually if wewe took a look at the Twitter Takeovers, which if I recall was done kwa the official Sonic voice actors on the official Sonic The Hedgehog twitter account, when a swali pops up asking if Sonic secretly has feelings for Amy, he gets a little nervous, so it's clear that the ship is kind of cannon, otherwise I doubt they would let the Sonic voice actor do that, and since he has never really liked a guy in any way, I'm pretty sure he's straight, he just isn't a very romantic kinda guy, likes doing his own thing more, but yeah if he ever settles down, it's gonna be with a female.
