With the release of the new Disney Movie, Big Hero 6 fast approaching, we wanted to show our love for Disney by making these adorable Baymax cupcakes! They’re super easy to make using boxed cake mix and store bought frosting. Add a jumbo marshmallow on top painting his eyes with black food gel icing! They’re the perfect dessert for your Big Hero 6 birthday party!
Use your favorite cake box mix to make cupcakes according to the package directions. I used a red velvet flavor because red seems to be a prominent color in the logo and design of Big Hero 6. Frost each cupcake with vanilla frosting, creating a swirl for his body.
Take the jumbo marshmallows and paint Baymax’s eyes, on the rounded edge, using a black gel icing pen. I found it at the grocery store, but if you can’t find it there you can probably get it at a craft store that sells baking stuff. Or online!
Allow the eyes to dry a bit and then place the marshmallow on top of the frosted cupcake. You’ll end up with Baymax cupcakes that easily!
Make these cupcakes as a fun treat for your kids and then go out and watch the movie when it hits theaters in November! The fact that they’re super easy to make, without all of these complicated decorating steps and techniques makes it so achievable for everyone!

Preheat oven to 350 degrees F. Mix and bake the cupcakes according to the package directions. Allow to cool completely.
Frost the cupcakes with the vanilla frosting, using a piping bag, food storage bag, or an off set spatula or knife.
Paint Baymax\'s eyes using the black gel icing, onto one side of each jumbo marshmallow. Allow to dry and set for a few minutes. Top each cupcake with the marshmallow and you\'re done! Enjoy!
