Hermione is a very deep person and she can always see deep inside of others and be able to see Draco's motives! I don't think she'd ever be able to forgive or forget Draco for calling her "mudblood" or ridiculing her in front of the class on countless occasions but she would be able to take his apology into consideration and review the circumstances! Perhaps accepting an apology would have been easier after they rescued them the room of requirement but after trying to get on the death eaters side...well he was pushing his luck!
